Wild fish : Smoked Marlin
Armoric carefully selects the best marlin loins without bones. These loins are then delicately salted and smoked using beech wood to bring out all the flavour of this exotic fish.

Marlin is a fish that is immediately recognisable by its long rostrum, as well as by its body covered in thick scales and its blue back. It is a robust fish that can grow to 16 feet and weigh 1,654lb. Its diet is composed of small tuna, skipjack and squid. A great predator and highly migratory, the marlin is a fish that loves warm waters and particularly the Indian Ocean and the Pacific Ocean. It is fished by line or long-line, then immediately frozen on board, which preserves all of its quality.
A meticulous preparation for a flavourful product: we select Marlin loins without bones or black muscle. Each batch is rigorously monitored so as to guarantee a protected product. The marlin loins are salted with dry salt, then smoked using beech wood, which gives them their delicately balanced flavour.
