Wild fish :  Smoked Halibut
A fish with a very delicate flavour, halibut is a fish from the cold waters of Greenland, Iceland and the Faeroe Islands. Its fillets, carefully selected by Armoric, are then smoked; in this way, the fish keeps the tenderness of its texture and acquires a delicately scented flavour.

Black halibut is a flat fish that has a dense muscle structure. Grey in colour, it has more or less uniformly dark pigmentation over the entire body, but a bit more pale on the blind side. Black halibut prefers cold waters. They are found from Greenland to the Norwegian coasts and also Iceland and the Faeroe Islands. Caught by bottom fish trawlers or long-line fishing, it is immediately frozen on board, which preserves all of its quality.


A meticulous preparation for a flavourful product: we select halibut fillets without bones or black muscle. Each batch is rigorously monitored so as to guarantee a protected product. The halibut fillets are salted with dry salt, then smoked using beech wood, which gives them their delicately balanced flavour.
