Malawi Marlin Steak with Yam Puree

For 2 people:

2 thick slices of Meralliance d’Ici et d’Ailleurs Marlin
½ kg yams (large tuber, used like potatoes but cooked more quickly)
50cl milk
30g butter
Chopped parsley
Salt, pepper

Preparation time: 20 minutes
Cooking time: 15 minutes

Malawi Marlin Steak with Yam Puree

 

 1. Boil the yams for about 10 minutes, check that they are actually cooked (the centre should be tender). Peel them and mash them in a bowl.
2. Add the milk and butter. Place the mixture back into a casserole and cook on low to make the paste uniform. Add salt and pepper as desired.
3. At the same time, cook the 2 thick slices of marlin for 2 minutes and 30 seconds in the microwave on high.
4. Serve the marlin slices with the yam puree, and chopped parsley as an embellishment.
