Albacore Tuna
Tuna is a powerful fish shaped like a cylinder. The albacore tuna’s back is dark blue and its belly is silvery. It can be up to 4 feet in length.
Its flesh is firm and dense, of a slightly iridescent colour. It is a very lean fish.
It is fished in French Polynesia.

Swordfish
The swordfish is a large fish immediately recognisable by its long, flat rostrum in the shape of a sword and by its smooth skin. It is distinguished from the marlin by its much less developed upper fin. It can be up to 15 feet in length.
The swordfish is known for its finely textured flesh, with a delicate flavour but not very pronounced.

Marlin
A great predator and highly migratory, the marlin is a fish that loves warm waters. It is immediately recognisable by its long, rounded rostrum, as well as by its body covered in thick scales.

Haddock
This is the name of smoked “églefin”. Haddock looks like cod, but it is smaller in size. Its head and back are silvery grey. Its belly has pink highlights. Its white flesh is more tender than cod's. Its size can reach 3 feet.
It is fished off the coasts of Norway and the Faeroe Islands.

Halibut
It is yellow or grey and has more or less uniformly dark pigmentation over the entire body. It is a fatty fish whose flesh is tender.
